Normally souffles are served hot and with puffy, buttery pastry. This unique dessert on the other hand, is the exact opposite. I got the chance to try this delicate dessert while I was in Hong Kong and this gorgeous chilled apple souffle was even promoted in a food program called "My Sweets". The berries are covered in rose-flavoured syrup and lightly speckled with edible gold. Candied apple slices are perched securely into the souffle and a thin stick of white chocolate is balanced perfectly across the dish. The souffle itself is very fluffy in texture and the apple is edible however because it is chilled, the tarty sourness of the granny smith has been lost.

Marina Bay Sands is one of the most iconic hotels in the world. It boasts a convention centre that measures up to 1 200 000 sq.ft in space, the world's largest atrium casino, the ArtScience Museum that is structured like a lotus flower and of course, who can forget its Infinity Edge swimming pool? Moshie Safdie, the leading architect behind this amazing project, took inspiration from card decks for the appearance of the three hotel towers. During the construction phases, feng shui masters Chong Swan Lek and Louisa Ong-Lee were consulted in regards to divination. 
It is commonly known that 'roses are red, violets are blue...' but that is not the case anymore. Blue roses do not exist naturally however in 2004, scientists have genetically modified the plant to contain the blue pigment delphinidin. Traditionally, blue roses are produced by dyeing white roses blue. Due to its rarity, the blue rose have come to symbolise many things; unattainable love, mystery and some cultures even claim that those who hold a blue rose will have their wishes granted. Usually my sketches are anime-style so this piece was quite experimental for me. I must say however, this picture is based off a photograph that I found on Google. I attempted to reproduce all the correct tones that were in the original photograph.
